The 4th Day of Christmas – Sweet Delight

The second favorite part of my childhood Christmas meal was my Grandmother’s Red Velvet Cake. It has been confirmed that dessert is considered part of the meal at Christmas!

I remember it always being baked in a sheet pan, and unlike the usual cream cheese or buttercream frosting, Grandmother had her own unique frosting that made her cake special...or at least it was to all of us!

Grandmother's Red Velvet Cake
1 Duncan Hines white cake mix
3 T oil
water amount as listed on cake box
3 eggs
2 T red coloring
Mix all ingredients and bake according to directions on cake box. Cool.

Frosting:

Mix 2 1/3 cups of confectioners sugar with 1/4 t salt and 1 egg. Boil 2 T water and 1/4 c granulated sugar and add to first mixture. Add 1/2 c Crisco shortening, 1 t vanilla and beat till smooth.

Last year at Christmas, I tried a different type recipe that was a big hit. Red Velvet Cake Balls! You may find it here. I liked the white chocolate dipped ones the best.

first time I ever had any was
when a sweet neighbor brought
this beautiful cake to my folks
and me one Christmas Eve morning.
Mom and I thought it was one of
the prettiest cakes we'd ever
seen. Then we tasted it! Heaven!
Daddy enjoyed it too, but he was
more of a pie man!

Christmas at my Grandmothers was her lemon meringue pie! OMG! I can still taste it.... No boxes or mixes just her in her kitchen.. A little sauce pan and flour and shortening! Raleigh lemon pie filling and before you knew it you had a pie that would melt in your mouth....... She always had to make two or else there was a squabble!

Hi Karen,

I'm not very good in the kitchen but I remember trying a Red Velvet cake and acknowledging that one has to have a talent for food preparation. This is the second recipe I've come across this week. I shall file it away for a time that speaks of Red Velvet cake to me.

That is a different kind of icing for red velvet cake. I'll have to try it. Christmas would be a great time to have red velvet.

We always make a birthday cake for Jesus at Christmastime. Red velvet would be good to remind us of the blood He shed for us.

Red Velvet Cake is so perfect for the holidays, isn't it? So festive AND yummy! And I LOVE cake balls. Mine never look like much, but they taste fantastic!
